Easy Zeppole Recipe

1 cup Presto Flour 1 cup ricotta 2 small eggs *mix the above ingredients and fry in peanut oil (or whatever oil you prefer). Use 2 spoons, 1 to pick up the batter and the other to help scrape the batter off the spoon; when they are golden brown shake off the excess oil or blot on paper towels, immediately roll in a bowl of fine sugar mixed with vanilla sugar (Sicilians in my family NEVER used confectioners sugar). Enjoy!
